The since and until parameters are not valid on the [node:10320] endpoint. In order to do what you want, you’d need to have queried the follower count a week before, and then stored that information to show the difference. You cannot get that kind of historical data from the Twitter API (although other services like Twittercounter, not associated with Twitter, may be tracking that data for the user ID you want to look at).
