I am working on a research project to get insight into how Twitter impacts people to get the vaccination, for this we need demographic user data and it is not available while using search query search_tweets. Please let me know how can we have it?

Unfortunately it is not possible to get demographic data for twitter accounts. You would have to infer demographics some other way.
